Thumbs up Chicken w/ Tomatoes (LOW CAL!)

This is for three servings based on my diet that requires 6oz of protein per meal. Adjust amounts as necessary.

6 Perdue chicken tenderloins (boneless/skinless) 6 Perdue chicken tenderloins (boneless/skinless)
1 can of Contadina (or preferred) recipe ready diced tomatoes
1 tablespoon of Basil
1 tablespoon of minced garlic (not dried)
1 1/2 tablespoon of olive oil

Add olive oil to pan and make sure pan is coated evenly
Cut chicken into bitesize pieces and add to pan
Cook on medium and move pieces around so they cook evenly
Add 1 tablespoon of fresh garlic to sautee with the chicken until chicken starts to brown
Add can of diced tomatoes and 1 tablespoon of basil
Let simmer for 2-3 minutes

Serve over brown rice or wheat pasta if desired.

Again, this makes 3 separate servings for me, so adjust according to your meal plan.

Total calories per serving = 251.5
