Default Recipes with Flaxseed Meal

I don't remember where i found these recipes but if I am craving carbs or bread I use these two recipes.

Focaccia- Style Flax Bread

2 cupes flax seed meal
1 tablespoon baking powder
1 teaspoon salt
1-2 tablespoons of splenda
5 beaten eggs
1/2 cup water
1/3 cup oil

Preparation:

Preheat oven to 350 degrees. Prepare a pan (10x15 pan with sides works best) wth oiled parchment paper or a silicon mat.

1. Mix dry ingredients well.

2. Add wet to dry and combine well (I just add it to the dry bowl so i dont dirty two dishes because im lazy)

3. Let batter sit for 2-3 minutes to thicken up some (don't leave it too long though or it gets too thick and hard to spread)

4. Pour batter onto a baking sheet. It's going to tend to mound in the middle, so to get an even thickness you spread it away from the center somewhat, but not to the edge of the pan. It should look roughly like a rectangle. If you spread it all the way to the edge of the pan, it will work the same but will be thinner.

5. Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly golden brown.

6. Cool and cut into whatever size slices you want.



Flax-Pancackes

2 eggs (I usually use one egg and 1/4 cup egg white substitute)
2 Tablespoons flax seed meal
2 Tablespoons heavy cream
1 tsp baking powder
1/2 tsp cinnamon

Mix ingredients together, pour onto a griddle and cook like a pancake. Spread with SF jam or syrup.

This is one serving.

Great recipes! Fresh baked bread on a cold winter morning or evening, that's what I'm talking about!

Exactly! I even mess around with the recipe all of the time and add some extra splenda and cinnamon (sometimes canned pumpkin and nuts also) to make a sweeter bread. It's all about making "bad" things good for you!

Yessir. Have you ever made bread with ripe bananas. Not legit banana bread, but like a hybrid/custom bread? I love cooking! Girls, I'm single, too! ;)

i have never tried adding banana in but thats because im doing a super low carb thing. Im sure the small amount you would get in a slice wouldnt really have an affect though so maybe i will try that. I would probably look up what spices normally go into banana bread and make any adjustments needed. DaVinci sugar free syrups have a bunch of flavors....they might even have a banana one to kick up the flavor. hmmm... good idea. let me know if you try it.

Just an FYI for ya hon, Splenda is not a zero calorie sweetener like they advertise it to be.

Refined white sugar runs 4 cals per gram. Splenda (and almost all store bought sucralose off-brands) runs about 3 cals per gram.

Splenda is 'fluffy' because the manufacturers add maltodextrin to the pure sucralose powder, creating more volume to make it even in sweetness to the same weight of pure sugar. That's where the cals come from.

So if you're trying to low carb it, and you're using Splenda, keep in mind that those carbs/cals add up pretty quick.

Hey IK thanks. Yea i usually track my splenda consumption in fitday with the rest of my food. I did the Atkins thing for a long time so im pretty familiar with their conversion charts on cals/carbs per tsp. Thanks for the heads-up though.
