| Man, i think rice pudding might be one of my favorite deserts of all time. and god knows it isnt good for you, especially late at night after a large meal. All that sugar, and milk, its a dieting nightmare. So here is my take on how to get your rice pudding into your diet. First, I started exsperimenting with different ways to make it. here is what i came up with. 1/2 cup large curd cottage cheese, add a packet of splenda and cinn. to taste. blend for 20 to 40 seconds. add 1/2 cup basmati rice steamed, then blend for another 20 seconds. Add in 1/4 cup lactaid free milk (or more depending on how creamy you want it) and blend till you get the consistancy you want. A few notes, you may need to play with it a little, and you wont want this as your before bed meal, but it is a good protien carb meal (i eat mine for breakfast ahhaha). you also want to stay away from regular milk, lactose causes insulin spikes. you can also add in a scoop of protien powder if you wish, but it will make it really thick, and you will need to add more milk. |
