| Ok, looking for someone to dispell a myth, I was told not to eat baked potatoes......something to do with the starch and the sugars changing during cooking (the exact details elude me at the moment), I was told to boil them wich I have been doing but it is much more time consuming. Any help would be much appreciated..........BTW boiled potatoes are pretty damn tastey. |

| IMO this is all going to hinge on what your goals are. From my understanding, your regular run of the mill brown skin potatoe is going to have the same GI rating no matter how you cook it. That being said, if your goal is to lose fat (and i believe it is) then eating potatoes isnt your best bet to begin with. Post up your diet and eating schedual and we can examine this more thouroughly. Perhaps chinpiece can throw his two cents in here. |

in just the chemistry of it all, everything changes when you cook it. but it depends on the food your cooking and whether or not your burn it. as for potatoes. it is find either way. baking it will not change the compounds in the potato that substantially. either way, most of the starches break down in your mouth because of your saliva and baking it will not change the GI in a way to make it better or worse for digestion. What I like to do for cooking potatoes, and this is only to save time, is I wash off the potato and rap it in saran rap, make sure the potato is still wet. Microwave it for about 2 mins, depending on how big the potato is. take it out poke a lot of holes in it and turn it over and re-rap, the saran rap might be a little disfigured but it's no biggy. set back in microwave for 30-60 more seconds, you will know about how long from how hard the potato feels when you try to poke it to the core. then presto... potato in about 3 mins.. hope this helps if I find any of my diet links I'll post them. | |

| Thanks for great info. I dont have a real clear cut dietary plan, I have been winging it for the most part lots of vegetables spinache celery the basics and offsetting that with protiens like eggs...eggs....eggs and lean meats mostly chicken. So: Quote:
