If you end up hitting 200 lbs (and not a pound before), you need to evaluate your bodyfat levels and what you think is acceptable levels. In my opinion, I would go as high as 15% before seriously considering cutting down. If you're under, then I recommend you keep bulking up. The more muscle you attain will make you look that much better after cutting down bodyfat.

Like I said, if you don't have enough muscle and decide to cut down, you'll more often than not look like a marathon runner.

how big would you be if ALL you did was:

Squat 400 x 20
Deadlift 500 x 5
Bench 315 x 5, or dip with 100 lbs added.
Chin with 75 lbs strapped to your waist x 5
Miltary Press 225 x 8

Pretty ****ing big is my guess. Without any "rear delt work".

See if someone you know has a pair of calipers. Don't use any electronic hand helds IMO.
