Do what the program says to do and you'll be fine.

I was thinking of doing the bill starr 5x5

but adding in an extra chest like incline and more arm, calve work..

Olympic Squats 5x5 (same weight)
Benching 1x5 (working up each set)
Incline 1x5 (working up each set)
JS Rows 1x5 (working up each set)
Accessory (low volume triceps and abs)

Wednesday:

Olympic Squats 5x5 (reduced 15-20% from Monday) (225lbs)
Standing Military Press 5x5 (same weight)
Deadlifts 5x5 (same weight)
Pull ups 5x5 (use weight if you need it)
Accessory (biceps and abs)

Friday:

Olympic Squats 1x5 (working up each set)
Benching 5x5 (flat or incline)(same weight)

There is such a thing as over training you know...

I wouldn't recommend adding anything to the program as it's written. At the very least run it for a while as is and see how your body handles it.
