Ok, first of all, taking a week off is not a big deal, there seems to be rampant paranoia about this. Your body is not some muscle eating monster just waiting for the chance to consume your hard earned gains. If you want to rest and recuperate, then keep up proper eating and do so.

However, I went over some of your previous postings, Playmaker, and I can't be sure but I think you may be doing too much cardio. More cardio doesn't always mean more fat loss. It can be the opposite after a while.

One problem is the cortisol release, which can sabatoge your weight work and cause your body to retain stubborn fat. There is an adaptation response when you perform too much cardio which can actually cause your body to hoard fat. If you over-restrict calories, which can mean a drop in metabolism, then the effect is compounded.

It has nothing to do with being young, or what your body can "handle". It's all about homeostasis. In my opinion, all the Hockey is enough. When you're not playing, then 3 or 4 days a week cardio, not more than 30 to 45 minutes, is the prevailing theory on effective cardio. (This may be changing).

Quite frankly, if you are going to do a lot of cardio 6 or 7 days a week, you may as well not bother doing weight work. If you gain any muscle weight doing that, then you are one lucky individual.
