IMO this is all going to hinge on what your goals are. From my understanding, your regular run of the mill brown skin potatoe is going to have the same GI rating no matter how you cook it. That being said, if your goal is to lose fat (and i believe it is) then eating potatoes isnt your best bet to begin with.

Post up your diet and eating schedual and we can examine this more thouroughly. Perhaps chinpiece can throw his two cents in here.
