in just the chemistry of it all, everything changes when you cook it. but it depends on the food your cooking and whether or not your burn it. as for potatoes. it is find either way. baking it will not change the compounds in the potato that substantially. either way, most of the starches break down in your mouth because of your saliva and baking it will not change the GI in a way to make it better or worse for digestion.

What I like to do for cooking potatoes, and this is only to save time, is I wash off the potato and rap it in saran rap, make sure the potato is still wet.

Microwave it for about 2 mins, depending on how big the potato is.

take it out poke a lot of holes in it and turn it over and re-rap, the saran rap might be a little disfigured but it's no biggy.

set back in microwave for 30-60 more seconds, you will know about how long from how hard the potato feels when you try to poke it to the core.

then presto... potato in about 3 mins..
