I don't know what your goals are but I'll just talk about the protein and leave the diet tweaking to the experts.

Well, I can't be sure the exact amount of protein, but I'd estimate that if you were to go for around 1.5 grams per pound of lean body mass you'd be eating for about 130 lbs (285 kgs, I think). Does that soud right? If not, you'll still need to up the protein (1.5 to 2 grams per lb).

Also, the bulk of your protein seems to be coming from shakes. That's certainly better than no getting enough protein, but optimum is getting the bulk of your protein from solid food. I know that can be difficult, though.

By all means, don't give up your roasts! Eating poultry all the time gets old fast if you ask me. A little red meat isn't gonna kill you. It seems to be more anabolic if you ask me anyway (although I couldn't back that up with any science).

On the pwo shake, if you are having pasta at the same time, cut that out and use a source of fast absorbing high GI carbs in your shakes. I think 50/50 dextrose and maltodextrin is the best, but opinions probably vary. Water only to mix it with. Your first solid meal should come 30 to 45 minutes later.

I agree that you really don't seem to be getting a lot of vegetables. When snacking, try to eat more nutrient dense foods when you can or as a time to get in some of the extra protein you may need.
