Well I wouldn't pay much attention to Doug there as he seems to have his wires severely crossed. Waxy Maize Starch, or high amylopectin starch has a most assuredly very high GI rating. It is not digested slower than other starches but faster than starches higher in amylose. But the guy contradicts himself anyway. But I do want to clear that up. Do not go thinking this stuff is low GI or even "fairly low GI". Don't use it like oatmeal.
Given that it sounds great based on the experience of trusted friends here and I would certainly try it.
