Default Late Night Workouts and Meals

Time to get some opinions here...

I've started working out later and later in the week. Usually I head to the gym around 8pm and get back around 9:30pm. When I get back I chug my normal post workout shake and everything is good, but I could use some insight on what I should be doing for the meal that comes about an hour later.

When I was working out earlier in the day I would have my PWO shake and then follow that up an hour later with a meal consisting of a decent amount of protein and low GI carbs to take advantage of the "window of opportunity." The problem is that now that I workout at night, I would be eating a meal then hitting the sack by 11:30pm. This means if I ate these carbs they would most likely just be sitting in my stomach when I hit the sack.

As of right now I have mainly be eating alot of cottage cheese and thats it. This provides me with the protein for the night but I am wondering if I am missing out on the carbs that I should be consuming in this meal to replenish my glycogen stores.

For those of you who work out late at night, what do you choose to eat for this follow up meal? Do you think I should still be eating low gi carbs along with the protein or do you think something like cottage cheese is good enough even though it lacks the carbs?
