The whole soy and estrogen thing is blown out of proportion. The body cannot convert phyto-estrogens into estrogens. There is weak estrogenic and so research (and supplements) for menopause symptoms but even then it's not all that significant as people would have you believe. I.E. there is some relief from symptoms like hot flashes (but no reduction in frequency) but it is simply that, relief from symptoms not an increase in body estrogen.

Use soy in moderation if at all, avoid soy millk and stick with traditional femented products. A soy protein ISOLATE would be fine but you're better off sticking with whey and a variety of protein sources.

I think glutamine may have some benefits but it certainly doesn't "pack on lean muscle". Lots of it is used in the gut for digestive health so it is beneficial in that way and also seems to have some immune enhancing effects. But in general, I agree it probably won't make a big difference unless you were to take 30 to 60 grams a day.
