Default Toss the yolk???

Correct me if I'm wrong, but I've been doing a little research from various sources and from what I've read about eggs, keeping the yolk can be quite beneficial. First almost half of the protein in the egg comes from the yolk. I think there is a common misonception, especially with young lifters that all protein comes from the whites. Secondly isn't there quite a bit of beneficial vitamins and minerals in the yolk? Last but not least people also toss the yolk because of the cholestorol factor, but shouldn't lecithin found in the yolk take care of most of that. If any body knows anymore please help because now I'm not real sure what to do with my yolk. Btw I'm new. I just stumbled across this site and have been reading it pretty religiously the past couple nights and collected some good info. Thanks for all of your hard work. Johan
