Since you're 6'3" 185lbs, I'm imagining you are a bit on the skinny side and don't have much fat to start with. So I'm guessing that you're looking to gain definition by adding mass to your frame.

Given your stats, I'm going to assume you have a fairly high metabolism. So I would follow a bulking diet and pack a few lbs of muscle onto your frame. Read the "How to Bulk" Sticky for diet info.

I would also look into Single Factor 5x5 or Mark Rippetoe's Beginners program.

I'm basing my advice on the assumption that you want to put muscle onto your frame though. If you're not looking to add muscle and just get more definition out of your current muscle, then diet down (decrease you calories) and almost anything should work as far as a workout routine.
