I agree with Scorcher, jumping up 2000 cals is a big jump. If you do it over time it's not so bad. Anyways I was having the same sort of problem. One thing that I did was I added a cup of mixed nuts to my diet. I think it's about an extra 900 cals or so. also has good source of protein and fats. You might want to keep them salt free.
Yogurt, cottage cheese, 2 % milk (some say whole milk), these are all high is calories and protein aswell.
Just write everything down and see what you come up with
