My simple "pumpkin pie" recipe is just mash some boiled/baked yam, sprinkle butter buds/molly mcbutter, splenda, and cinnamon on there. And viola you have "pumpkin pie filling". You can even just go simple and get the pumpkin pie spice and use that. If you want bit of a crust to it, put it into a pam sprayed small cake pan and bake around 350 for a few miinutes.
