Sure skip it if you want to. Or just do something lighter rather than a true PR attempt. For instance, the same weight from the volume workout but only a couple sets. the danger in skipping altogether is you're going 4 days without squatting at all. It depends on the individual but that could mess you up next volume workout.

And the squat substitution is a good idea. Also, you know, you could try doing reg squats for PR day. It would make a whole lot of sense.

What you would want to do is get back into the squatting groove by just doing a few moderate sets of reg squat for a couple of you PR days. Then estimate what you want to go for but stick with the 1x5 at first for the PR's.

Everything doesn't always have to be absolutes. There many times is a very good comprimise. In this case a comprimise between switching to reg squats or just switching some days. And a compromise between skipping a squat altogether or doing something just to keep in the groove.
