Simple carbs will generally give you a quick energy burst and then be gone sooner. The complex carbs are a more "slow burn" I believe. I would stick with complex carbs. They are generally accepted as healthier.

What are your lifts at right now?

I would say start the SS program by the book along with a journal which describes in detail what weights and progressions you're using for everything as well as specifics of diet. Don't feel you need to stick to the program exactly as written for ever. It will eventually become much to aggressive to continue at that rate.

Videos of your main lifts might help as well. Maybe you have a crucial form flaw that you're not seeing? I see 85% of the people at my gym doing 1/2 squats and deadlifts with a half-moon back. I'm not saying your lifts are wrong but its something to look into. You definately have to learn the movements while doing light weights before moving up to where you're maxing your body out.

I'll say it again, start light. Set your ego aside at the gym door. Do a weight that you know you can complete today and for many more days. You want to teach your body how to lift while slowly loading on more weight over each day/week. I think starting very light and moving up gets your body "accelerating" through the weights and teaches it how to grow and adapt to the weight progressions.

Well thats what I would do. Document everything and I'm sure people here will try to help you out.

Oh yeah, always be polite and courteous. This isn't just directed at you but a general comment. Sometimes things get heated but keep your cool and say your opppinion in good proper english without bashing anyone.

Finally, always remember that there are guys on this site that have pretty much boundless knowledge. If you're nice to them, they'll help you out any way you can.
