Default Crunchy Thai Salad

Here is a version of a thai salad that i like alot. I will also give two different dressing options. Both are low carb, the first one is lower calorie... so it just depends on your goal i guess.

Salad

Use any combination of the following:

Bean sprouts
green or red peppers
baby spinach, cut in thin strips
hot chiles, sliced thin
carrot, sliced thin
green onions
cucumber, in thin sticks
napa cabbage, shredded
bok choy, chopped
snow peas or sugar snap peas


Dressings

1. Thai dressing

1/4 cup lime juice, you will need 2 small limes
3 tbsp oil
1 tbsp sesame oil
1 tbsp soy sauce
2 tsps granular splenda
pinch of ginger
1 smalle serrano chile, minced
pinch of cilantro

2. China Coast Dressing

1/2 cup mayonnaise
5 tbsp rice wine vinegar
2 tbsp splenda
2 tbsp sesame oil
1 tbsp soy sauce
1/4 tsp garlic powder


- So basically just toss all the veggies in a bowl and add the dressing. You can let it marinate for up to an hour if you want. Any longer and it might get a little soggy.


( sometimes i sort of combine the two recipes. for example, take recipe number two and add the ginger, cilantro, and serrano chile from number 1. Its a highly variable recipe)

I am not sure where i got these recipes but i have had them for a couple years and i like them. Just thought i would share.
