Default The Chest

Ok like many people ive always believed that training the chest was simple, and it goes like this:

Upper chest incline pressing
Centre chest flat bench press
Lower chest decline press
Outer chest flys
Inner chest close grip bench, cable crossovers.

However since reading a thread here im now of the understanding that this is all untrue. Example, flat bench pressing will do the whole chest ( the chest being one muscle). I think im right when i say that genetics play a huge role when it comes to the shape of ones chest.

So my question is this, why do we do so many different exercises for the chest? Why dont we just do the exercise that enables us to use the heaviest weight, which for me is flat bp?
