If you freeze it, it keeps for a long time (months).

I cook it up in one batch, then while it's still hot and steaming, I portion out individual meals in each ziplock baggie then put them right into the freezer.

In the morning, throw a few frozen salmon baggies in a 6pack cooler, and you're good for the rest of the day. If you put it in the cooler frozen, it will be safe to eat all day long, even in the summer.

Then just nuke them as you need them.

If you don't have a microwave, thaw them out the night before, in the fridge. Then, in the morning throw them in your cooler with a little ice. Cold salmon actually tastes pretty good if you toss on a little sour cream & capers.
