Like Ross said we would need to know what your main goal is to give specific critiques on your meals but in general you can create some very healthy Mexican style meals. You just need to modify the nutritional info according to your daily caloric intake goals.

Hot Sauce, Salsa, and pico de gallo are great toppers for your chicken or lean beef as they don't add hardly any calories. Same with hot peppers, onions, and other veggies.

Avocado or guacamole is a great healthy fat source.

The cheese is questionable depending on your goals, but you can always use a low fat version to make it healthier.

If your allowing yourself to eat carbs then you can always just throw all of this into a whole wheat tortilla or on top of some brown rice.

Beans are a good source of carbs and protein, but once again it will depend on your goals. If your buying prepared ones be sure to check the labels for added sodium and unhealthy fats.
