Alan Aragon's Research Review. Ross..you would love it. There is a multi-part series on nutrient timing. Actually, I'm sure there is a 'before bed' discussion but I haven't even gotten to that part yet. More information than I can digest but it is really answering many questions or reinforcing a lot of my own conclusions.
Anyway...I think what you eat at night should be about how it fits into your diet, macronutrients an caloric goals, what it easy on your stomach, and what allows you to sleep well. Carbs would be out for most anyway.
As for as the GH you'd probably maximize that by eating nothing before bed so this is like I've been saying and saying...stop looking at small physiological details FIRST. Look at the big picture and the proceed to the details.
Most of the time once you get the big picture in hand you find that the details are just that...details.
