I'll admit it's probably blown out of proportion. I like the yolks runny, so it's a good excuse.

A lot of people talk about the high heat oxidizing the cholesterol, which is definitely bad. Then there's the theory that the iron in the egg whites also oxidizes the egg yolks, so you shouldn't mix the whites and eggs. So fried with the yolks runny or soft boiled is better.

Eggs also contain omega 3 and 6. I've read that commercial eggs have a 6 to 1 ratio of omega 6 to 3, which is bad, while organic eggs contain a 1 to 1 ratio, which is better. I doubt these amounts are strictly true, since other factors determine the proportion of fats other than just simply commercial/organic.

Also, it's the ratio of omega 3,6, and 9 in your overall diet that matters, not the amount in any one food.

But the omega's are very unstable to high heat. Hence my supposition that cooking the yolks all the way destroys the good stuff. Not that you should eat them completely raw, like I remember this one health guru saying.
