Default Weightloss,Muscle gain

Hi guys and gals, I'm Kier I'm 27, and I'm restarting the gym after some 1.5 years out due to health related issues (no details).
I'm currently sat around 150/152kg(23.9 stone) and im 183cm (5.11ft).

I'm looking for mostly diet advice as I have no issue with eating less calories my issues arrise when it comes to my stomach movement, i either have rabbit droppings or complete liquid no matter the fiber intake so I'm curious is anyone has issues like this and has managed to solve them, I get most of my fiber from oats/bread/baked beans, since I'm not a fan of vegtables other than the tasty unhealthy ones.

while you're here I'm also wondering if i should go straight into my old routine of 5 days a week in gym and 2 days rest or what I want to lose around 20kg before summer/july, and would love some advice from someone or ones that have been through similar transformations.
