Default Metabolism, digestion, calories

Can someone tell me about metabolism? I'm trying to figure out what percentage of someone's caloric intake is metabolized. I suppose "metabolized" is the right word. Or...what percentage of those calories are processed. I suppose a lot of it depends on how well food is chewed, the person's digestive system, how fast the food is consumed, the type of food, the combinations of foods, etc. But I have no idea how much these variables affect the process. Anyone have any input?
