I got tired of making the same old stuff so i tested out a recipe tonight where i kind of just threw stuff in the pan. Here goes:
I took:
1/2 lb shrimp
2 cups spinach
1/2 c cilantro
1 tsp fresh grated ginger
3 tbsp thai chili-garlic paste (add less if you dont like spice; you can find it in the oriental aisle at any grocery store)
1 cup peas
1/2 cup lite coconut milk
If you eat brown rice you could throw that in there too if you want.
I cooked my shrimp until they were almost done and then i threw in everything else and just let it cook for like 5-10 mins
It turned out really good and i was surprised that the lite coconut milk was only 45 calories and 2 carbs (1 sugar) for the amount i used.
If you cant find the chili-garlic sauce you could used curry paste or powder and it would probably be just as good
if anybody trys this, let me know what you think
