Default Thai Dish - Pad Prik Sai Gai - Spicy Vege's and Chicken over rice

Living in Thailand the last 5 years has given me a wonderfully expanded view to chicken and rice - no longer do I eat the boring steamed chicken and rice, with a few quick modifications chicken and rice becomes a meal to look forward too.

Ingredients:

200 - 300 Grams Chicken Breast (1/2 lb) (or use pork)
Onion
Banana Peppers, also called Paprika (use the vegetable, not the powder)
Cabbage
Garlic (I use pre-cooked)
Chicken Stock Powder
Soy Sauce
Oyster Sauce
Chillies (small hot - optional)
Boiled Rice

Preparation:

Dice Chicken (skin on or off depending upon your current dietary goals). Add chicken to the pan, add about 1/3 of a cup of water as we'll be cooking in water rather than oil. Turn pan heat on. Put the pan lid on.

Dice the onion (and optional chillies) and add it to the pan.

Slice the Banana Peppers and add them to the pan.

Add garlic to taste, stir all the ingredients together in the pan.

Slice cabbage finely and add to the pan, stir again.

Add soy sauce and oyster sauce and stock powder (you can see I substituted pork flavour as I had run out of chicken flavour). Aloow to cook through for about 5 minutes.

Serve over rice and eat.

Great recipe.. LOVE THAI FOOD! Went there while in the Navy MANY times. I make my own chicken curry and Pad Thai with spinach noodles every now and then but it's one of those foods I cant get enough of so I don't make it often.

Thanks for posting that recipe (although an old post)
