Default Try this South American treat!!

OK. You heat up some EVOO, or corn oil, or probably any type of cooking oil, in a frying pan (just enough to cover the very bottom of the pan), add in a relatively ripe plantain that you cut into thin (about 1/8" discs), and fry them until a light brown-to slightly dark brown. Let them sit a while once cooked, so they will become firm. Make a yogurt-protein powder dipping sauce if desired, and you're good!! Everytime I make some, my sis bugs me to make her some!

I actually just made some plantain the other night.

Here's what I did:

Slice plantain into 1/2" thick chunks. Boil for about 10 minutes.

While that boils, mix up some splenda and cinnamon and spread that mix thinly over a plate.

Once the plantain are boiled, roll them through the splenda/cinnamon mix.

Either pan fry with Pam, or place in a baking dish and bake at 350-400 for about 5-10 minutes.

That sounds really good, IK. I would have never thought of that! I ought to make some banana-protein pudding. HG, you (and everyone else) should try it, I really like em!
