You're on the right track with your question. It's about VOLUME. Could you do something as boring as flat bench for 6-10 sets of 10 reps? Sure you could. Most people, myself included, prefer to increase our volume by splitting it around a few exercises. I'd rather undulate my volume (sets x reps) and manipulate my rest between sets during a workout.
So in essence, you're not picking a handful of exercises with the goal of isolating sections that don't exist. You're managing fatigue and volume. If my front delts get fatigued from doing a few sets of heavy incline barbell pressing, then I'm not going to lower the weight to accomodate more volume. Instead, I'll do some weighted dips which takes a lot of stress away from my delts. Same concept with doing a lot of work for your chest pressing, then incorperating some db flyes which places the stress on your chest and away from your triceps.
