Default rest is bad (for me)

I tried working out 4 times a week doing my whole body once (intense training). It did a little bit I noticed some results in 2 months. I just recently was trying something else. I have been going to the gym 2 times a day all week only resting on Sundays and running that day. I got way stronger in a month. My lifts went up 20% and I gained 5 pounds of muscle. I would do pushing upper body in the morning and pulling upper body in the evening. The next day in the morning I would do pushing lower body power lifts and in the evening do individual leg muscles. then i would start again the next day. Why did this give way better results? And why have you guys been saying that with you need rest to gain muscle? Why have you guys been saying that more gym time does not necessarily bring greater results?
