Default unexplained soreness - any thoughts?

my quads are incredibly sore right now and for the last two days - to the point where i wouldn't train them - and for no reason i can think of. i haven't really worked them hard since last monday and no other muscle in my lower body is sore. it feels like a TON of lactic acid buildup but i don't know why - the only training changes i've made recently have been to REDUCE lower body workload, not increase it. i'm taking a little time to let some inflammation in my left patella come down, hence the training reduction.

this is how my training looked last week:

sun: 10min sprint workout at night
mon: upper body lift, 10min sprint workout at night
tues, wed, thurs: off, sauna sessions to cut weight for wrestling
fri: upper body lift, swimming at night
sat: off

nutrition-wise, those three days - tues, wed, thurs - i was eating very little, 6-8 ounces of food per day at the most. i was drinking almost no water and wasn't taking my multivitamins at this point.

could this soreness be because of the lack of water/vitamins over those days? if so, could it be remedied by taking in disproportionately high amounts of both for a few days now that i'm not cutting weight?

thanks a lot for reading. i appreciate any help - usually cutting weight is my area of expertise lol, but this doesn't usually happen. any thoughts?
