I am 6' 190 now. Want to lose fat but every time I try I end up around 178ish and feel way too thin.

If you don't eat enough you will lose muscle. Try increasing your calories. If your not going to do carbs then your break down should be close to 60-40 or 50-50 protein/fat. Try setting your calories to 2600 and see what happens.
