Found this at another forum in a diet thread, its pretty damn good and is a great way to break the egg boredom:
Recipe for NO-carb egg pancakes
6 whole eggs (or you can mix Egg Beaters and Whole eggs to hit your macronutrient goals for the meal)
4 packets Spenda or a pinch of pure sucralose (for you malto-haters like me!)
1 tbsp PURE Psyllium Husk
Walden Farms No Calorie Chocolate, Marshmallow, Caramel or Maple Syrup
I've done it without the psyllium husk and syrups and it works fine, tastes like french toast without the bread.
