That sounds good! I make something similar at home. Instead of the peppers in a jar, you can take a bell pepper, quarter it, and rub olive oil on it & then put it on a pan & broil in the oven. When it starts to brown/singe, take it out and stick it in a bowl of ice water. The tough skin will come right off.

I'm going to have what you just mentioned tomorrow when I do a short carb up...except that I'm using pepper jack cheese I haven't toasted a sandwich in years. Thanks for the inspiration
